When it comes to selecting eggs, organic and free-range are best.

Here are two simple egg recipes, the first you can eat, the second you can use as a facial treatment:
Easy Silverbeet Frittata
Ingredients 1 tablespoon olive oil 1 small onion, finely chopped 1 bunch silverbeet, finely chopped 1 half red capsicum, finely chopped 1 clove garlic, minced 6 beaten eggs 1 tablespoon fresh herbs: basil, oregano or parsley
Method Warm oil in a medium-hot frying pan and fry onion, garlic and capsicum until they begin to soften. Add the silverbeet and cook for until it wilts, about 5 minutes.
Ensure the vegetables are evenly distributed in the pan, and sprinkle the fresh herbs on top. Pour the beaten eggs evenly over the vegetables, and allow to cook uncovered until the eggs begin to set.
Turn the heat down to medium-low, and cover the frying pan with a lid to allow the eggs to cook through.
Enjoy with a fresh side salad. Serves 4.
Clay & Egg White Face Mask The proteins in egg whites help to absorb excess oil and rebuild damaged skin. Clay is a fantastic deep cleanser, which helps draw impurities from the skin.
Ingredients 2 tablespoons white clay 1 tablespoon corn flour 1 beaten egg white 1 drop chamomile oil chamomile tea
Method Mix the clay and corn flour together in a bowl, and add the egg white and chamomile oil. Beat together until a smooth paste is formed. If the paste is too thick, it can be thinned with the addition of freshly brewed (and cooled) chamomile tea.
Apply to a clean face, allow to dry, and rinse with tepid water.
