This is going to be a beautiful weekend to come out to the farm! The weather is perfect, the veggies are at the height of the season. The spring plants are popping up all over the farm. We have our FREE Hydroponic Seminar at 11.00 tomorrow (Saturday). John will go over some great topics and tips including why you may see lady bugs around our farm. Get your list of questions ready. We are here to help you make this the best experience in growing your own food that you will ever have. The prices at the supermarket have not even begun to hit how high they will go. I read in the Tampa Tribune that no one has an Onion Fest in Florida, well come on down to the farm because we do! Florida Sweet Onions also know as Strawberry Onions are the sweetest most delectable onion you will ever taste. We will have several tables set up with some good onion dishes for tasting , the easy peesy recipes to do it yourself and all of the fresh ingredients available at the farm. I stopped into a vegetable stand today because I needed something I didn't have. It was nice, but BORING! Our farm is so much fun and the kids always have a blast. Although strawberries and onions don't sound too appetizing if served together at dinner, they are wonderful when grown together. At Hydro Harvest Farms large sweet onions are grown around the edges of our Strawberry Plants to ward off pests. When it is strawberry season, it is also Florida Sweet Onion season.
Sweet onion storage
Ideally, sweet onions should be stored in a cool, dark, dry location and spread out for optimum air circulation. Most growers suggest placing onions in a clean pair of pantyhose, with knots tied in between each onion, then hung in a cool, dry place. Just snip off below each knot when you need one.
Stored properly, sweet onions should last in your pantry about ten days to two weeks.
Cut, raw onion leftovers should be tightly wrapped and refrigerated to be used within a few days.
Although sweet onions are best eaten raw, they can be chopped and frozen for future cooking uses, with no blanching necessary. Frozen onions begin to lose their flavor after about twelve months in the freezer.

ENCHANTED ENDIVE
It offers a delicate, bittersweet flavor
MARINADE;
1 bay leaf
� cup olive oil
1 tsp. minced garlic
2 Tbsp. red wine vinegar
Heat to simmer, and then set aside.
To warm marinades add fine julienne of;
1 medium red pepper
1 medium green pepper
1 medium red onion
Arrange large endive leaves in a circular motion on a platter. To each leaf, add 1 tsp. feta cheese, Plus 1 Tbsp. marinated vegetables.
ENDIVE IS ALSO GREAT FOR SERVING WITH A SPECIAL DIP INSTEAD OF CHIPS OR CRACKERS.
