Greetings!

Florida State Fair time is here again. We love the fair! Hydro Harvest Farms will have a great garden set up in front of the Ag-Ventures Building. This year we are gearing our garden to the health of all children. Too many studies indicate that our children are not getting the proper nutrition because of a diet filled with processed, sugary, chemical laden foods. Parents are responsible for the health of the children, and maybe at home we have kids that eat all of their veggies and fruits. But, what happens at school? Take a careful look at the menu. We need to change, now. Teachers and school administrators are taking a good hard look at the facts. Really, it is amazing! They want the better food choices for your children. It's a big, involved political cash cow, to overcome. But, you and I can change it.  

Healthy School Food, an article by the Environmental Working Group states:

The 2012 farm bill can help make salad bars a reality for more school children if its authors  require the USDA Section 32 program to buy considerably more fresh produce for hard-pressed school systems.   Doing so could also provide new financial incentives to local produce farmers who receive very little direct federal support.

This is where we, the little farmer can play a small part, and perhaps the governmental incentives will help all small farmers bring a better lunch to your children. We have become a partner with several of the School Districts in the Southwest area of Florida to build small Hydroponic Farms at your child's school. Take a look, it's really cool. If you are a teacher, or parent email us for more information. We are having a blast working with the teachers from the Grade Schools up to the local Colleges. This is our mission in life. To give everyone the opportunity to grow and eat good food, and live a much healthier life!

Hydroponics For the Classroom

 Schools are now participating in Hydroponics for the Classroom. This is just one simple way to introduce fresh healthy food choices for students. Children who grow, pick and are encouraged to pick healty food to eat, make healthier choices. It is such a great learning experience to watch a seed grow from just a little thing to something we eat. Support the Hydroponics for the Classroom Project at HydroHarvestFarms, and teach the kids a wonderful lesson that they will take with them for ever.

 

A report by the Produce for Better Health Foundation calculates that diet-related medical costs of four serious illnesses - diabetes, cancer, coronary heart disease and stroke - amount to $38 billion a year. Obesity pushes the figure past the $100 billion mark.

There is substantial evidence that people whose diets are rich in fruits and vegetables are far less likely to suffer from these health problems.  Yet children eat shockingly little fresh produce. According to a 2009 study by scientists with the Centers for Disease Control and Prevention, just 1 percent of adolescents ate as many servings of fruit and vegetables as recommended by USDA dietary guidelines.

How can we pay for healthier school food?

The Healthy, Hunger-Free Kids Act has authorized increased federal spending of six cents per meal.  That would cover part of the nearly $7 billion price tag. But the USDA projects that the administration's school food plan would cost 15 cents more per lunch and 51 cents more per breakfast, when you add up all food and labor costs.  Elementary school math tells us that we will still be short by about $6.5 billion over 5 years.

Schools can make up some of the difference by rearranging menus and increasing efficiency.  But at least half the $700 million needed annually to pay for additional fruits and vegetables should come out of the $5 billion USDA doles out yearly in direct payments to large and profitable farming operations that produce many of the commodities formulated into livestock feed and over-processed, nutrient-poor foods.

Congress will debate the wisdom of subsidies for the largest growers of corn, soybeans, cotton, wheat and rice as it considers the upcoming budget and the 2012 farm bill.  Advocates for a more rational food policy (like EWG) will press for shifting resources to encourage consumption of fruits and vegetables and level the farming field for producers of sustainably-grown healthy foods.

HAPPY VALENTINES DAY

 

APPETIZERS

 

WATER CHESTNUTS WRAPPED IN BACON

Toothpicks soak in water

 

Mix together:  � cup soy sauce

                       1 Tbsp. sugar

 

One can of water chestnuts

 

Drain one can of water chestnuts. Toss with mixture and let sit for two hours.

 

Cut each slice of bacon in 1/3's and wrap 1/3 piece of bacon around water chestnut and spear with toothpick.

 

Bake 300 degrees 5 minutes and then broil until bacon is cooked.

 

BOUISIN CHEESE

16 Ounces cream cheese, softened

� cup mayonnaise

2 Tbsp. Dijon mustard

2 Tbsp. finely chopped chives

2 Tbsp. finely chopped dill

1 clove garlic, finely minced

 

Using and electric mixer, thoroughly blend in mayonnaise, mustard, chives, dill and garlic. Spoon into small bowl and refrigerate 24 hours. Serve with choice of crackers.

 

SALAD

This past week I made a delicious salad, all ingredients from the farm.

 

Variety of lettuces, arugala, etc.

Radishes

Onions

Cauliflower

Tomatoes

 

Tosses altogether do not add dressing in the bowl. Place salad in a metal bowl and cover with a shower cap. When ready to serve, chill plates, and dress salads with your favorite dressing.

 

CHEESE FROSTED CAULIFLOWER

1 head of cauliflower

� cup mayonnaise

1 � tsp. Dijon or Grey poupon mustard

� cup shredded cheese

 

Steam whole cauliflower 15-20 minutes. Place cauliflower in a baking pan. Stir together mayonnaise and mustard. Spread over head of cauliflower. Scatter � cup of shredded cheese on cauliflower.

 

Bake 375 degrees - five minutes.

 

ENTR�E

 

Pescado a la Naranja (Fish in Orange Juice)

2 pounds fresh or frozen halibut, cod or other fish steaks

 

� cup finely chopped onion

2 cloves garlic minced

2 Tbsp. cooking oil

2 Tbsp. snipped cilantro or parsley

1 Tsp. salt

1/8 tsp pepper

� cup orange juice

1 Tbsp. lemon juice

 

Thaw frozen fish. Arrange fish in an oven proof baking dish.

 

In small skillet cook onion and garlic till onion is tender, but, not brown. Stir in cilantro, salt and pepper. Spread mixture over fish.

 

Combine orange juice and lemon juice; pour evenly over all.

 

Bake covered in 400 degree oven for about 20 to 25 minutes or until fish flakes easily when tested with a fork. Sprinkle with paprika and garnish with orange slices, if desired.

 

SERVE YOUR FISH ON TOP OF COOKED RICE. THE SAUCE IS SO YUMMY POUR ANY EXTRA OVER FISH AND RICE.

 

DESSERT

 

KAHLUA BROWNIES

Your favorite brownie mix, except use half the amount of water indicated and substitute the remaining half with Kahlua. When ready to serve place a dollop of whip cream and garnish with some strawberries.
