What? Produce going sky high? Unnaturally cold weather in December did reek havoc on the prices at the grocery stores. Well, if you don't have any control over the food you eat and grow, and you don't take advantage of buying local, in season, then yes, you will pay a pretty penny for your groceries. Did you know,

Florida farmers produce "nearly all our nation's domestically produced fresh fruits and vegetables during the winter," according to a statement released by the state's agricultural commissioner, Charles H. Bronson. "There is much at stake, both for our state's farmers and for consumers all across the United States who count on Florida to provide them with fresh domestic produce in the winter." Well maybe it's time to count on yourself?

 

This isn't as much of an issue when you grow hydroponically. Our Strawberries have never been prettier, our lettuce loves the cold and is as sweet and tender as can be, ask Carmen. (Family joke). Greens love the cool air and roots. We are overloaded with Arugala, Collards, Lettuce, Swiss Chard, Bok Choy, green onions and many many strawberries. We have learned that we can control what we put in our bodies and eating fresh, local, seasonal fruits and veggies is the best thing for you. Our prices don't fluctuate with the freezes, downpours and droughts, Our costs have little to do with fuel costs, we are pretty consistent. Of course our whole crop isn't just one thing, like cucumbers. But, that's what we are all about. You can choose lots of fresh picked foods in our gardens, or grow them yourself all year long.

When the "you can't grow like that"people notice the benefits of Hydroponics in growing our food and the healthiness of pesticide free crops, then budgeting to eat won't be as much of a problem.  Just saving more money because of how much longer you'll live!

Creamed Swiss Chard
(Thanks For This Clair and Eric)
SWISS CHARD
SWISS CHARD

Ingredients:

  •  2 pounds, Swiss chard
  • 3 or 4 slices bacon, diced
  • 1 clove garlic, mashed and finely minced
  • 1/4 to 1/2 cup finely chopped  onion
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup half-and-half or whole milk
  • pinch nutmeg
  • salt and pepper, to taste

Preparation:

Wash chard and cut off thicker stems. Thinly slice the stems and chop leaves into 1/2- to 1-inch pieces. Steam or boil the stems for about 5 minutes, then add chard and cook until wilted, about 4 minutes longer. Drain well, squeezing out excess moisture if necessary.

In a medium saucepan over medium heat, cook the diced bacon until crisp; remove and set aside. Add onion and garlic and cook until onion is tender. Stir in the cooked drained chard and the reserved bacon; set aside.

In a saucepan over medium heat, melt butter. Stir in the flour until smooth and bubbly. Add the half-and-half or milk and nutmeg. Cook, stirring, until smooth and thickened. Add salt and pepper, to taste.

Add about 1/2 of the sauce to the chard, stirring to blend. Stir in more or all of the remaining sauce mixture, as desired.

Excitement is in the air all over the fairgrounds with plenty of free entertainment included with admission. Make sure to plan your day in advance to enjoy all the sights, sounds, and tastes the state fair has to offer. Parking is free during the Fair.
