"WASTE NOT, WANT NOT"
"BUY LOCAL, BUY SEASONAL, BUY FRESH"
I HAVE TO START THIS WEEKS RECIPES, I WAS DOWN AT THE FARM YESTERDAY AND "WOW" EVERYTHING IS GREEN AND READY TO PICK. I SAW NUMEROUS REPORTS ON THE NEWS ABOUT OUR FOOD SUPPLY INCREASING IN PRICES, EVEN MORE REASON TO GO DOWN TO THE FARM, STOCK UP AND MAKE CASSEROLES, SOUPS, ETC. FREEZE.
WE ARE GOING TO USE ALL THOSE LEFTOVERS YOU HAVE FROM THANKSGIVING
SWEET POTATO BALLS
3-4 cups of leftover sweet potatoes
2/3 cup packed brown sugar (optional; depending on your original recipe)
2 Tbsp. orange juice
1 tsp. orange zest
� tsp. freshly grated nutmeg
1 tsp. ground cinnamon
1 large marshmallow per potato ball
Coconut or crushed pecans for rolling balls
Preheat oven to 350 degrees.
Stir in the juice, zest and nutmeg. In a separate bowl, toss the coconut or pecans with the cinnamon in a separate bowl. Press mashed potatoes around each marshmallow, creating a diameter ball. Roll the balls in the coconut mixture or pecan mixture. Bake for 15 to 20 minutes. Checking carefully for the last few minutes of cooking; the expanding marshmallows in the potato balls may burst open.
LEFTOVER POTATO CAKES
Leftover mashed potatoes (shape into small patties)
Add for each cupful:
A beaten egg
Chopped parsley
Chopped celery
Grated onion or � cup chopped saut�ed onion
Grating of nutmeg
Dip the cakes in:
Flour, bread crumbs or crushed cornflakes
Melt in a skillet, butter or other fat.
Brown the cakes on one side flip and brown the other side.
If you had leftover gravy, have these for breakfast with your eggs and leftover biscuits. And in our house a splash of hot sauce (optional). I am from the South and we truly enjoy rice or grits with breakfast.
SHEPHERDS PIE WITH LEFTOVERS
In a saucepan, add any leftover vegetables you might have. Add chopped turkey, chicken or ham. Add some broth, stir all together and simmer slowly with a little flour or cornstarch if you think it is not thick enough. Place in a lightly buttered casserole dish and top with leftover mash potatoes spreading overall. Sprinkle with paprika or pepper, dot with butter and bake.
TURKEY, CHICKEN OR HAM PATE
I DISCOVERED THIS BY ACCIDENT AND IT IS DELICIOUS
1 hard boiled egg
2 stalks of celery
Chopped green onion
Salt and pepper to taste
Mayonnaise or miracle whip
A touch of mustard
In your food processor, blend all ingredients until it becomes very smooth. Remove and place in a small container and chill. When ready to serve, place on a bed of lettuce, surrounded by crackers or use the lettuce as a wrap.
For Ham salad, if you have leftover pineapple, place in the processor with your other ingredients and process until smooth. Chill in a small container for later use.
It was so delicious for us, we were spreading it on fresh French bread, or toasted if you want a sandwich.
TURKEY SANDWICH WITH CRANBERRY SAUCE AND LEFTOVER STUFFING
YOU MAY DO THE SAME WITH CHICKEN OR HAM. TOAST BREAD OR NOT, YOUR CHOICE.
IF YOU WERE LUCKY ENOUGH TO HAVE LEFTOVERS FROM THE RELISH TRAY, ENJOY.
IF YOU MADE PIES AND CAKES FOR THANKSGIVING, AND HAVE LEFTOVERS, SERVE WITH ICE CREAM OR WHIPPED CREAM.
Be thankful for you have and not sad for you do not have. If you can give a can of something to the needy or better yet, cook some things from the farm. God Bless us all.
