Greetings!

Not that I want to LURE you away from the farm this weekend, but the best darn Seafood Festival will be this weekend on the shores of the Tampa Bay. The 22nd Annual Ruskin Seafood Festival will be Saturday and Sunday Nov 6 & 7. Hydro Harvest Farms will be right in the middle of the food action. We will be selling a BIG Salad with a skewer of grilled shrimp or chicken. Of course we are using only our farm fresh salad makings. I got to thinking about all of the Festivals I've gone to, and I could never get just a good salad. Well, we hope you come by our festival truck for some good salad and a Strawberry Shortcake. We will also have Brats, Hot Dogs, and Roasted Corn.We may bring some hot coffee too!

Next weekend we will have our free Hydroponic Growers Seminar.This class starts at 11.00 and there is plenty of parking across the street. If you have even the slightest interest in growing your own healthy food, or if you need some tips on your garden now, this is a great class to attend. Also, if you have an inkling for some good Florida Sweet Onions to start, we have hundreds of sets to sell. These onions are so good!

Watch for Hydro Harvest Farms on News Channel 8 with Leigh Spann! Yes, she heard about the fun things and wonderful time everyone had at our 5th Annual BOO Fest, so she is coming down to talk to us and film the farm. Thanks Channel 8, we watch you every morning and evening. Did you'll see the South Shore News this past Wednesday? Lois Kindle took some great pictures and did a wonderful article on the BOO Fest, it is in this past Wednesday's South Shore News of the Tampa Tribune.To top it off a group of Foodies got together with Lynn Kessel of the Tampa Tribune and they stopped by the farm for a taste of fresh Arugula Salad. Best of all we have Andrea Freebody and her delicious recipes. She has traveled the world collecting recipes and she shares them with us every week.

We're not just kicking tires at the farm. We have a great family and group of neighbors and friends and the greatest customers in the world. We all share a common goal, eat local, buy local, eat healthy and return things better than you found them. 13 Mineral Nutrients It's All in the Water
Hydroponics is the method of getting the same nutrients the plant needs to thrive , but not through the soil.

 

The 13 mineral nutrients, which come from the soil, are dissolved in water and absorbed through a plant's roots. There are not always enough of these nutrients in the soil for a plant to grow healthy. This is why many farmers are using Hydroponic Growing methods. 

The mineral nutrients are divided into two groups: 
macronutrients and micronutrients

 Macronutrients  

Macronutrients can be broken into two more groups: 
primary and secondary nutrients

The primary nutrients are nitrogen (N), phosphorus (P), and potassium (K). These major nutrients usually are lacking from the soil because plants use large amounts for their growth and survival. 

The secondary nutrients are calcium (Ca), magnesium (Mg), and sulfur (S).

Micronutrients 

Micronutrients are those elements essential for plant growth which are needed in only very small (micro) quantities . These elements are sometimes called minor elements or trace elements, but use of the term micronutrient is encouraged . The micronutrients are boron (B), copper (Cu), iron (Fe), chloride (Cl), manganese (Mn), molybdenum (Mo) and zinc (Zn

LAST WEEK'S NEWS LETTER FROM THE FARM, WHAT'S READY TO PICK AND WHAT'S GROWING WHY GO TO YOUR LOCAL GROCERY STORE WHEN THE PRODUCE IS CHEMICAL FREE AND LAST A LOT LONGER?

 

MESS O' GREENS SALAD WITH WARM PECAN DRESSING

6 cups mixed fresh greens, shredded

 

2 Tbsp. balsamic vinegar

2 tsp. honey

1 Tbsp. Dijon mustard

1/3 cup coarsely chopped pecans

2 tsp. vegetable oil

 

Combine greens in a large bowl and set aside.

 

Stir together vinegar, honey and Dijon mustard.

 

Cook vinegar mixture and pecans in hot oil in a small skillet over medium heat, stirring often, approximately 2 minutes. Pour over greens and serve immediately.

 

PENNE WITH ARUGULA PESTO

2 Tbsp. pine nuts, toasted in a very small amount of oil

2 large garlic cloves, minced

4 cups trimmed arugula

� cup (1 ounce) grated fresh Parmesan cheese

2 Tbsp. water

2 tsp. fresh lemon juice

1/8 tsp. salt

2 Tbsp. olive oil

 

5 cups hot cooked penne pasta with ribbing on sides of pasta

 

Drop toasted pine nuts and garlic cloves through food chute with processor running and process until smooth. Add arugula, Parmesan cheese, water, lemon juice and salt to food processor and process until finely minced. With food processor on, slowly pour olive oil through chute and process until well-blended.

 

Combine pesto with pasta in a large bowl and toss well.

 

TIP: Pesto can be made a week ahead of time, store in a zip lock bag or freeze in ice cube trays for later use.

 

THIS PESTO IS EXCELLENT OVER GRILLED CHICKEN OR JUST SPREAD ON LIGHTLY TOASTED BAQUETTES. ALSO, IF YOU ARE MAKING YOUR OWN HOMEMADE PIZZA, IT IS GREAT AS A BOTTOM SAUCE, Enjoy!

 

I have also tried which is great, make your favorite potato salad and instead of mayonnaise, use pesto sauce.

 

MINT AND CHIVE SAUCE

2-3 Tbsp. fresh mint

2 Tbsp. minced green onions

� cup rice vinegar or white wine vinegar

� cup water

� tsp. kosher salt

� tsp. sugar

Pinch of crushed red pepper flakes

 

Whisk together mint, chives, vinegar, water, salt, sugar and green onions. Serve in individual sauce dishes for a dipping sauce.

 

TIP: Great for chicken strips or steamed grilled shrimp.

 

CREAMY HERB SAUCE

� cup mayonnaise

2 green onions, green and white parts minced

1 Tbsp. plus 2 tsp. fresh lemon juice

2 Tbsp. minced fresh oregano

2 Tbsp. minced fresh basil

2 tsp. paprika

Pinch of cayenne

� to 1 tsp. kosher sauce

� tsp. freshly ground black pepper

6 Tbsp. sour cream

 

Whisk mayonnaise, onions, lemon juice, oregano, basil, paprika, cayenne pepper, salt, pepper and sour cream together. Taste and adjust seasonings.

 

Serve this velvety sauce with grilled or steamed chicken, shrimp, and scallops. Great to dress chicken and water chestnut salad.
