Pumpkins Pumpkins and more Pumpkins! We have them and they have never been prettier! Great big orange globes just ready for the carving knife, or paint and sparkles. Make your Halloween Pumpkin picking time an experience for the kids. Let them run through the hay, roll the pumpkins, pick there favorite and then pull them in a wagon to the car. Sure you can grab a pumpkin in the supermarket, throw it in the cart and voila your done, but what kind of fun is that? Half the fun is in picking them out! Our Pumpkins are fresh from Michigan. We think they are superior to most. In fact the pumpkins I see in the stores right now are really blah! I am bragging because I know we choose the best. Not only Pumpkins, but Gourds and Hay and a great big tractor is at our patch. If you haven't seen GREAT BIG PRIZE WINNERS, come on over. These are so cool, and gigantic too! We picked up a truck load and if you really want to wow your neighbors, or have a neat display in your business, this will get attention!

STRAWBERRY GROWING TIPS
Some Little Things You Can Do To Improve Your Strawberry Growth.
 
Getting Started With Hydroponic Strawberries
Last week I discussed where the strawberry plants come from and why you must choose plants that will grow in our sub tropical climate in the winter. This week I am inclucing a few tips we learned as growers and these are very simple to follow. Next week I will discuss the IPM of keeping plants healthy from pest and other issues.There are practical things you can do to produce healthy, productive strawberry plants. Here are a few tips:
  • Strawberry varieties. There are several types of strawberry plants available, but "day neutral" plants are best for hydroponic production. These plants will produce berries throughout a four to six month growing season.  
  • Keep on the sunny side. Place your hyrdoponic strawberry plants in a sunny location like a south or west facing area. They'll need at least six to seven hours a day of full sun.
  • Temperature. The hydroponic strawberry plants are perfectly suited for our winter temp ranges in Florida. A temperature range from 64 to 85 degrees Fahrenheit, is best for these plants. The plants will survive low temps for a period of time, but will need to be covered if there is a threat of a freeze. Remember, you can easily dismantle your towers and bring all of your plants in, or simply cover them with something as you would any of your outdoor shrubs.
  • The birds and the bees. Believe it or not, we have never had any issues with birds bothering our growing systems. For some reason, the birds don't want to come near our plants. Ah, but bees, you need them for pollination, so welcome the honey bee.
  • No running! Be sure to clip runners from your strawberry plants as they appear-this new growth will take energy from fruit production. If you keep some runners for future plant production, store them in the refrigerator for several weeks to simulate winter. Trim and Prune the large leaves. Sometimes the leaves will take the nutrient that the flower and fruit needs. Some leaves can be cut away for better fruit.

Buying Tips
Buy firm, bright-colored pumpkins, free from cuts or nicks. Mini pumpkins have a rich, sweet flavor. Other cooking pumpkins include sugar, cheese, and pie pumpkins. They are often cooked and used for pie filling, but canned solid-pack pumpkin is a very consistent, high-quality product. Jack-o'-lantern pumpkins have string, watery flesh and are best reserved for Halloween decorations.

To Store
Store pumpkins in a cool, dry place up to one month. Refigerated up to 3 months.

To Prepare
Cut pumpkin in half or into quarters; remove the seeds and scrape out the stringy portions. Cut into large pieces.

To Cook
To steam, in a saucepot, heat 1 inch of water to boiling over high heat; add pumpkin pieces and heat to boiling. Reduce heat to medium-high; cover and cook until tender, 25 to 30 minutes. Drain, cool, and peel. If desired, mash with butter, brown sugar, and cinnamon. Or, if using for pie filling, puree in a blender or food processor with knife blade attached. Do not add other ingredients. Place in a paper towel-lined sieve set over a bowl and let drain to remove excess liquid; puree should have the same thickness as solid-pack canned pumpkin. One pound of uncooked pumpkin yields about 1 cup puree. Find more delicious pumpkin recipes using our Recipe Search.

COME ON DOWN TO THE PUMPKIN PATCH,"LET'S GO PUMPKIN"

Don't' forget to bring the whole family and cameras

 

TO COOK PUMPKIN.WASH AND CUT IT IN HALF CROSSWISE. PLACE IN A PAN SHELL SIDE UP.  Remove seeds and strings. Place in a deep pan depending on the size of the pumpkin. Bake in an oven 325 degrees for approximately 1 hour or more depending on the size until it is tender and falling apart. Scrape the pulp and put into a blender or ricer. NOW WE HAVE FRESH PUMPKIN PUREE' OR FILLING.

 

"WASTE NOT, WANT NOT" SAVE THE PUMKIN SEEDS, WASH AND CLEAN OFF STRINGS FOR LATER USE.

 

SIDE DISHES

 

SAVORY CHUNCKED PUMPKIN

1 pound pumpkin, cut into chunks

� tsp, cinnamon

1 tsp dried thyme

2 tsp. sweet butter or margarine

 

Steam pumpkin until tender about 8 minutes.

 

Drain and peel pumpkin, then place in a medium bowl along with cinnamon, thyme and butter. Toss well to combine, but, take care not to crush chunks. Serve hot over rice. It is fantastic with smoked turkey.

 

SPICY PUMPKIN SIDE DISH

Peel bottom of a pumpkin and slice like a dinner plate

1 tsp. curry powder

� tsp dried thyme

3 bay leaves

� tsp salt

� tsp freshly ground black pepper

1 tsp. butter or olive oil

 

Preheat oven to 350 degrees. Place pumpkin in a glass pie plate with about � cup water. Sprinkle with other ingredients. Cover with foil and bake for about 45 minutes or until water evaporated and pumpkin is tender. Remove foil for last 10 minutes if there is still some water.

 

Slice like you would a pie and serve as accompaniment to meats.

 

PUMPKIN SOUP

1 large onion

� cup butter or margarine

� tsp curry powder

1 (16 ounces of fresh pumpkin puree or 1-16 ounces can pumpkin)

1 � tsp. salt

2 cups half-half

2 � cups chicken broth

 

Fresh chopped parsley, sour cream or ground cinnamon for garnish.

 

Saut� onion in butter until tender, sprinkle with curry powder and saut� another 2

Minutes. Stir in pumpkin and salt; add half & half, stirring constantly. Whisk in or stir in broth and heat thoroughly.

 

Garnish if with desired, parsley, sour cream or ground spices of choice.

 

PUMPKIN SPICE CAKE

1 3/4 ground pumpkin flesh

2 cups flour

6 tsp. baking powder

1 � tsp. salt

2 tsp. cinnamon

1 tsp. ginger

� tsp nutmeg

� tsp ground cloves

2/3 cup shortening

1 � cup honey

4 eggs

2 tsp. vanilla

 

Combine pumpkin, flour, baking powder, salt, cinnamon, ginger and cloves and mix well.

 

Cream shortening, honey, eggs and vanilla. Add flour mixture and mix well.

 

Bake at 350 degrees in a 9"x13" pan for 50-60 minutes.
