CRISP LETTUCE |
Dakota Marie (pictured above) helped Grandmom and PaPa John pick lots of strawberries. Now as an added treat, we have wonderful jams, preserves, butter, syrups, salsa, and much more! I can't wait until the Florida Sweets (onions) come in, imagine the great salad dressing we can make with them.
We are so excited about this new addition to our garden market.
The heat has been extreme. The herbs, eggplants, peppers and okra love it! The lettuce is a little stressed. A tip with fresh picked lettuce this time of year, is to soak it in ice water. It will bring the lettuce to a nice crisp leaf and better tasting.
If you are anticipating the fall growing season, now is the time to get your growing systems ready. If nothing is growing in them now, you can empty the growing media and freshen it up. If it has roots, stems or any organic matter in them, pull that out. Then with vermiculite and perlite or coconut coir you can rinse a diluted solution of bleach and water through it. About 1 teaspoon of bleach to a gallon of water. This will sterilize the media and won't hurt anything. If you like after the initial treatment, just rinse water through the media. When you put the media back in the system, you may need to add a little more. If you don't have extra, stop by the farm. We sell it in various sizes.
You can also whiten your systems up with a little bleach water. The systems at our farm are up to 5 years old and they look beautiful when we clean them up. If you stop by the farm, you will see most of our farm with empty towers, just waiting for the great strawberry plants. Remember, the strawberries grown in Florida aren't the plants and seeds you may find at Big Box Stores. We get plants that thrive in our region. Our plants are all organically certified.

ROSEMARY IS A WONDERFUL FRAGRANT HERB
The name rosemary has nothing to do with the rose or the name Mary, but derives from the Latin name rosemarinus, which is presumed to mean "dew of the sea", though some think this too may be derived from an earlier name.
Rosemary is often commonly associated with memory and/or remembrance of the past.
Cultivation and uses
The fresh and dried leaves are used frequently in traditional Mediterranean cuisine as a herb. They are extensively used in cooking, and when burned gives off a distinct mustard smell.
Since it is attractive and tolerates some degree of drought, it is also used in landscaping, especially in areas having a Mediterranean climate. It is otherwise quite easy to grow for beginner gardeners. It is very pest-resistant.
It can be propagated from an existing plant by clipping a shoot 10-15 cm long, stripping a few leaves from the bottom, and planting it directly into soil.
Rosemary is a useful food preservative, according to research published in 1987 by Rutgers University, New Jersey. Researchers at Rutgers patented a chemical derived from rosemary that compares favorably with BHA and BHT in its preservative properties.
Rosemary can be added as an unusual extra flavoring in lemonade.
Medicinal uses
Rosemary has been found to be a stimulant and mild analgesic, and has been used to treat headaches, poor circulation.
It can be used as a disinfectant, as a mouth wash and to treat fever or rheumatism.
Rosemary has a very old reputation for improving memory, and has been used as a symbol for remembrance (as in worn during weddings, war commemorations and funerals) in Europe, probably as a result of this reputation. Students in ancient Greece are reported to have worn sprigs of rosemary in their hair while studying for exams to improve their memory, and mourners would throw it into graves as a symbol of remembrance for the dead. In Shakespeare's Hamlet, Ophelia says, "There's rosemary, that's for remembrance".

ROSEMARY POTATOES
Ingredients
- 2 pounds red potatoes, cut into quarters
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon dried rosemary, crushed
Directions
- Preheat oven to 450 degrees F (250 degrees C).
- Place potatoes in a large roasting pan and toss with oil, salt, pepper, and rosemary until evenly coated. Spread out potatoes in a single layer.
- Bake in preheated oven for 20 minutes, stirring occasionally. Serve immediately.

ANDREA'S RECIPES
"WASTE NOT, WANT NOT"

HOMEMADE EGG ROLLS
� lb. lean pork, thinly shredded
1 cup celery, diced
2 stalks green onions, chopped
2 Tbsp. oil
1 Tbsp. soy sauce
� lb. shrimp, chopped
� lb. bean sprouts
1 Tbsp. sesame oil
1/2 tsp. salt
Egg roll skins.
Heat 2 Tbsp. oil; add pork stir fry for 2 minutes. Add shrimp and stir fry 1 more minute. Add bean sprouts, celery and green onions, stir fry for another 2 minutes. Add 1 Tbsp sesame oil. Sprinkle 1 Tbsp. soy sauce and � tsp. salt and stir fry briefly to blend ingredients. Let cool for 30 minutes before filling egg roll skins.
- Filling should be drained and cooled as much as possible.
- Place 4 Tbsp. of filling slightly below center of skin toward one corner.
- Fold that corner over to cover filling and firmly roll up the filling towards center, then fold over the right and left corners, roll over and seal with beaten egg wash.
- Pre-heat oil for deep frying to 375 degrees.
- Add egg rolls, frying till crisp and golden.
- Drain on paper towels or in a colander.
- Do not stack egg rolls or they will loose their crispness
- Serve with dipping sauces of choice.
SCAMPI PROVENCAL
It's rich, delicious and great for a dinner party
2 lbs, jumbo shrimp
14 oz. mushrooms, sliced
1 tsp scallions, minced
12 oz. tomatoes, peeled, seeded and chopped
3 oz. beef bouillon
1 lemon
Salt and pepper to taste
4 oz. olive oil
1 -1/4 garlic, minced
2 oz. white wine
2 Tbsp. chopped parsley
4 oz. parmesan cheese
� stick of butter, room temperature
1 lb. fettuccine
Flour
Cook fettuccine according to package directions, adding salt, pepper and juice of half a lemon to the cooking water. Cook to al a dente and drain well.
Dust shrimp with flour. Heat olive oil in a large skillet or saut� pan. Saut� shrimp until golden brown. Add mushrooms, garlic and scallions, saut� 2 minutes and add white wine, juice from the remaining lemon half, tomatoes and chopped parsley and simmer 3 minutes. Add beef bouillon and parmesan cheese; remove from heat. Just before serving, fold in butter and season to taste.
Reheat fettuccine if necessary, serve shrimp and sauce over fettuccine.
