Happy Mother's Day to anyone and everyone who has taken care of someone. The definition of Mother encompasses so many kind souls. We hope this Mother Day you will remember those kind people and wish them a Happy Mother's Day! And for those whose moms may no longer be in this world, remember some day you will see them again happy and waiting with open arms!It may be tough, hang in there. Love You Mom!
 
Now, let's talk about how we can take care of our children today. In the paper, the Tampa Trib, there are two significant events as to why you should take control of your own food destiny. Once again E-Coli outbreak in lettuce. Read the FDA newsbreak too. This is happening all too often. We don't have to settle for this. Hydroponic lettuce is grown in a sterile environment, free from sources that can cause E-coli. Hydroponic grown lettuces and other vegetables are more nutritious, free of invasive chemical pesticides, so easy to grow yourself and tastes better than any lettuce off the shelf in a store. Factors that cause E-Coli are greatly reduced when using Hydroponic growing methods.
Also, what is going to happen to the sea and plant life from the oil spill in the Gulf? I think we can't take chances anymore. Eggs and larvae of fish and shellfish, including tuna, grouper, red snapper, shrimp, crab, oysters and mussels, will likely die if they're inside the spill area. We haven't tried to grow snapper in our gardens (ha,ha). But, it all ties in to the fact that choices that are being made in the name of money are sometimes bad choices.
 
Balance is what we all need. Food, shelter and clothing are essential. Keep your priorities straight and you will have control over the important things in life. Mom's know!

"WASTE NOT, WANT NOT"

"HAPPY MOTHER'S DAY"

 

BREAKFAST PIZZA

1 lb. bulk pork or chicken sausage

1 cup frozen loose-pack hash brown potatoes, thawed

5 eggs

� tsp. Salt and pepper

1 pkg. (8) refrigerated crescent rolls

1 cup shredded cheddar cheese

� cup milk

2 Tbsp. grated Parmesan cheese

Fresh thyme to taste, chopped finely

 

In a skillet cook sausage until browned, drain off excess fat on paper towel.

 

Separate crescent dough into 8 triangles. Place on an ungreased 12-inch pizza pan, with points toward the center. Press over bottom and up sides to form a crust; seal any perforations. Spoon sausage over crust. Sprinkle with potatoes. Top with cheddar cheese and fresh thyme. 

 

In a bowl whisk together eggs, milk, salt and pepper, pour into crust. Sprinkle Parmesan over all.

 

Bake in a 375 degree oven for 25 to 30 minutes.

 

STRAWBERRY BANANA FRUIT CUPS

1 cup sour cream

� cup fresh strawberries

1 medium banana

2 Tbsp. chopped crystallized ginger or fresh ginger grated very fine

1 Tbsp. packed light brown sugar

1 Tbsp. rum or rum extract

3 cups sliced bananas

2 cups fresh strawberries, halved

2 cups seedless green grapes

Sprigs of fresh mint

 

Combine sour cream, � cup strawberries, medium banana, ginger, brown sugar and rum in blender or food processor. Blend until smooth. REFRIGERATE OVERNIGHT.

 

In a large bowl, combine bananas, strawberries and grapes. Toss fruit with dressing, garnish with mint and serve.

 

This wonderful fruit dish looks elegant served in crystal bowls and garnished with fresh mint. 

STRAWBERRY BREAD

MAKES 2 LOAVES IN 9X5-INCH LOAF PANS

1 � cups vegetable oil

4 eggs

20 ounces of fresh strawberries (2 � cups)

3 cups all-purpose flour

1 tsp. baking soda

1 tsp. salt

1 � tsp ground cinnamon

2 cups sugar

1 � cups chopped pecan

 

Beat oil and eggs until fluffy. Add strawberries and mix well.

 

Combine flour, soda, salt, cinnamon and sugar and add to egg mixture, stirring until well blended. Stir in chopped pecans. Pour batter into 2 greased and lightly floured 9x5-inch loaf pans.

 

Bake at 325 degrees for one hour and 15 minutes, or until a wooden pick inserted in center comes out clean.

 

If you have the small loaf pans, you can use those, the loaves after baked freeze, beautifully wrapped in aluminum foil and placed in a zip lock bag. They are great for gifts.

 

TIP: BLEND TOGETHER CREAM CHEESE AT ROOM TEMPERATURE AND STRAWBERRY JAM OR FRESH STRAWBERRIES MASHED WITH JUICES SPREAD BETWEEN TWO PIECES OF BREAD TO MAKE DELIGHTFUL TEA SANDWICHES.

 

NOW WE ARE OFF TO DINNER FOR MOTHER'S DAY

HAVE DAD LIGHT UP THE BARBECUE GRILL

PICK UP WHATEVER YOU LIKE, CHICKEN, STEAK, RIBS, KABOBS, ETC.

 

MARINATE CHICKEN BREASTS OR PORK CHOPS IN ITALIAN DRESSING, MARINATE FOR A FEW HOURS OR OVERNIGHT AND THEN GRILL.

 

POTATOES ON THE GRILL

WRAP YOUR RUSSET POTATOES IN ALUMINUM FOIL AND GRILL UNTIL FORK COMES OUT TENDER IN THE CENTER.

 

FORTEX GREEN BEANS

1 lb. Fortex green beans snapped beans in three to four inches

 

Bring a pot of water to a boil, boil fortex beans for approximately 4 to 5 minutes, drain and place fortex beans back in hot pot, add some soy sauce, shake pot to coat beans, and a small amount of vegetable oil. Add salt and pepper to taste. Cook the fortex beans al-a -denta.

 

"WASTE NOT, WANT NOT" IF YOU HAVE LEFTOVER FORTEX BEANS, ADD THEM TO YOUR FRESH SALAD GREENS FROM THE FARM THE NEXT DAY". DO NOT FORGET YOUR RADISHES, GREEN PEPPERS, ONIONS, POTATOES CUT UP AND A NICE LIGHT DRESSING. ALSO IF YOU HAVE ANY LEFTOVER CHICKEN, BOILED SHRIMP OR ANYTHING OF CHOICE YOU MIGHT HAVE IN YOUR REFRIGERATOR, ADD TO YOUR SALAD.

 

TURNIPS: IF LARGE PEEL AND CUT IN QUARTERS, AS IF YOUR WERE MAKING MASHED POTATOES, BOIL AND THEN SIMMER UNTIL FORK TENDER, MASH, ADD SALT, PEPPER, BUTTER AND SOUR CREAM. MIX AND SERVE. THEY ARE REALLY SWEET. IF YOU ARE NOT QUITE SURE MIX TURNIPS WITH REGULAR POTATOES AND MASH, I LIKE MINE CHUNKY.
