Yea, Florida weather is back! No one truly appreciates this beautiful state we live in until it gets cold! I'm sold, no more cold for me. The strawberries did great! Luckily our farm is so close to the Tampa Bay, our temps are higher than many. We did have 2 days with hard freezes, but we did fine. John turned on the misters, that use very little water and coated the plants with a thin layer of ice. Today, the berries look good and we are picking to our hearts delight. Come on down.

ROSIES BOK CHOY SALAD
This is one of my favorite recipes
Ingredients
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 1/2 cup white sugar
- 1 tablespoon soy sauce
- 1/4 cup margarine
- 1/4 cup blanched slivered almonds
- 1/4 cup sesame seeds
- 2 (3 ounce) packages ramen noodle pasta, crushed
- 1 medium head bok choy
- 3 green onions
Directions
- In a small bowl, whisk together the vinegar, oil, sugar and soy sauce. Set aside.
- Melt the margarine over medium heat in a small skillet. Crush the ramen noodles while still in their packaging, and add to the margarine along with the almonds and sesame seeds. Saute until everything is golden brown. Remove from heat and drain on a paper towel.
- Chop the bok choy and green onions and add to a large bowl. Just before serving, sprinkle with the noodle mixture and dressing, and toss to coat.

WHY SAVE WATER? OR ALSO KNOWN AS I-4 MAY BE ONE BIG SINK HOLE SOMEDAY!
We have always known that using 80% less water than a soil garden was a very important reason to choose Hydroponics over Dirt, but this week I think it has been proven. I know it is very important to make sure the farmers do everything possible to save the crops. So, what was needed to be done, given the circumstances, had to be done. But, why are we not incorporating Hydroponic methods into more of our farming practices. Sure it may be expensive on the front end, but in the long run, the savings of our natural resources like water and fuel is insurmountable. I think the same reasoning is used in the question " why don't we use more solar power?" We live in Florida and there are no incentives to go solar. Maybe some politicians and corporations don't want these changes to be made! Swiftmud should be looking into reducing the need for our precious water, rather than digging deeper wells.
Hydroponics is our future, and I believe we will need water more than anything else in that future. Forget about oil, water will be the next resource people fight over.

Onion Varieties
Onions are placed into two different categories. There are long day onions and short day onions. Long day onions tend to grow better in the Northern states and require about 15-16 hours of sunlight to produce bulbs. Short day bulbs work well in the Southern states and need about 12 hours of sunlight to produce bulbs. When shopping for onion varieties to grow, they will be labeled with an L for long day, and s for short day.
The other main thing you need to know about onion varieties is how they grow. We tend to consider onions as bulb onions, but there are also perennial onions, like leeks, chives, nest onions, and bunching onions.
