 I want to dedicate this newsletter to everything we have to pick, growing, just planted and fresh picked in our market. I think I tend to overlook the BOUNTY of great food we have at any given time. I am in awe every weekend when I go to the farm (I have a real job that pays the bills!). It is really inspiring. The good Lord gave us everything we need, and we tend to overlook the beauty in all of it. If your children have never seen food growing, now is the time to treat them to this wonder. We see children everyday that will knock your socks off with what they already have learned in school. They visit the farm and finally it all clicks. I have a 7 year old grand daughter that knows what is growing just from looking at the flowers on the plants. Now that is progress! She loves the farm. She may not like beets, but she knows them when they are growing and how important it is to grow them.
 
Give yourself and your family the time to learn about growing your own food, or even just picking your own food. We will not disappoint you. Hydroponics is the future, check out Vertical Farm.com . We are just a little step towards the big picture. But, the wheel was too!
 
I found a great link to a vegetable growing guide. Now keep in mind it is based on growing in soil, but the only thing different in most cases, is with hydroponics you substitute growing media and liquid nutrients for soil and soil based nutrient. This info is from Cornell University. Enjoy your garden, grow hydroponically and take the guess work out, enjoy the best tasting veggies you will ever have and learn in the process. We never stop learning, creating, experimenting, just loving it all!

Excellent summer variety! Batavia or "French crisp" type forming large, open heads. Vibrant green leaves are glossy, thick, and beautifully ruffled with a satisfying combination of crunchy texture and buttery smoothness. Batavian types are perfect for summer planting due to excellent bolt resistance while still maintaining good texture and flavor in the hot summer sun. Lettuces of all types thrive in hydroponic growing systems. I guarantee you, no other lettuce tastes as good as our lettuces.

Distinctive Italian zucchini, prominently ribbed. Medium gray-green, with pale green flecks and ribs. Big, large-leafed bush with only about half the yield of hybrids, but much better tasting; clearly better textured, nutty, and delicious, raw or cooked. Also a good producer of heavy male blossom buds for cooking.

Lime or Lemon Basil

These varieties of Basil are freshly citrus scented and are mild enough for flavoring grilled fish or shrimp salad.  Pasta dishes with vegetables and chicken are delicious with the citrus basils.  The plants will grow to about 2' tall and around. 

To grow Lime or Lemon Basil, the daytime temperatures must be warm but not too hot (around 80-95 degrees) and it must get at least 3-4 hours of sunlight a day.  It can be grown with filtered light all day  If it gets too hot this plant will not grow well although it is a bit more tolerant of heat than Sweet Basil. They love the hydroponic method. These basil flowers do not need to be pinched constantly but the plant will produce more leaves if the flowers are removed frequently.

To harvest Lemon and Lime Basil, cut off the top one third of the branches at the next intersection with more leaves growing. This will allow the new leaves to begin growing and become your next harvest.  Never harvest more than one third of any herb plant so that it can recover from the pruning. 

To use Basil in cooking, add chopped fresh leaves to anything and everything, there are no rules at all when it comes to basil.

"WASTE NOT, WANT NOT"

"BUY LOCAL, BUY SEASONAL, BUY FRESH"

 

Eggplant information: Eggplants are either male or female. Look at the blossom end, if it's indented, it is a female, if it's smooth, it's a male. Males have fewer seeds, which sometimes taste bitter. To remove most of the bitterness, slice eggplant and sprinkle with salt; let stand 30 minutes. Rinse and pat dry with paper towels.

 

EASY FRIED EGGPLANT

1 small eggplant

Salt

1 beaten egg

Fine cracker crumbs or seasoned bread crumbs

Shortening for deep frying

 

Cut eggplant in 1/2-inch slices.

Sprinkle with salt and let stand 15 minutes. Dry.

Dip dry slices in beaten egg and then in crumbs. If possible refrigerate briefly; crumbs will adhere better.

Heat shortening to 375 degrees.

Deep fry eggplant in oil for 3 to 4 minutes or until slices are golden brown. Drain on absorbent paper.

 

Yields two servings or double for four servings.

NOTE: Summer squash may be prepared in the same way as eggplant. Use yellow squash or zucchini.

 

 

EGGPLANT RELISH

 

There are numerous ways to serve this relish, prepare, refrigerate and reheat to serve several ways, such as a spoonful as a relish for meat, a larger portion as a side dish, over pasta for a main dish or on toasted French bread slices.

 

4 - 6 eggplants from the farm (4 � pounds)

3 medium Farmer John's sweet onions, chopped

1/3 cup olive oil

1 (16-ounce) can tomatoes undrained and chopped (TIP: Easy way to chop, use a potato masher or pulse in food processor)

� cup chopped fresh parsley or basil

2 Tbsp. minced garlic

1 Tbsp. sugar

2 tsp. fresh chopped oregano or 1 � tsp. dried oregano

1 tsp. salt

� tsp pepper

1 cup oyster sauce or clam juice (optional)

1 (8-ounce) can tomato sauce

1/8 tsp. ground red pepper

1/8 tsp hot sauce

NOTE: Adjust spices to your personal tastes

 

PEEL eggplant; cut into �- inch cubes. COMBINE eggplant cubes and water to cover in a Dutch oven, bring to a boil. Reduce heat and simmer 10 minutes or until tender. Drain and set aside. SAUTE chopped onion in Dutch oven over medium heat 10 minutes, stirring often. ADD eggplant and tomatoes; cook over low heat 10 minutes, or until liquid is almost evaporated, stirring often. ADD parsley or basil and next 7 ingredients, cook five minutes stirring occasionally. Add red pepper and hot sauce. Serve immediately or

cover and refrigerate up to 5 days.

 

TOMATO AND PEPPER SALAD

4 green peppers

6 firm tomatoes

2 Tbsp. lemon juice

6 Tbsp. olive oil

Salt & Pepper to taste

� clove garlic, minced

Capers

 

Put the peppers under a hot broiler and roast until the skin are charred black. Cool in a paper bag. then skin, remove the seeds and membranes and then chop them. Skin the tomatoes and remove the seeds and liquid by cutting them in half and squeezing gently. Chop these also, and drain. Combine the lemon, oil, salt, pepper and garlic. Mix with the vegetables and strewn some washed capers over the salad. OR: if peppers do not appeal to you, make a salad in the same way, however add either oregano or dill to the marinade. The tomatoes can be left peeled but left whole, with chopped onion or a bouquet of dill in the cavities.

 

SIMPLE MARINATED CUCUMBERS

FROM MY GREAT GRANDMA IN NORTH CAROLINA

 

1 cup oil

� cup vinegar

1 Tbsp. sugar

Salt and pepper to taste

1 medium onion, peeled and sliced

2 cucumbers, peeled and sliced

 

Stir together in a quart jar the oil, vinegar, sugar, salt and pepper. Then alternate the onions and cucumbers, adding a pinch of salt and pepper after each layer.  When the jar is filled, cover with the top and shake hard. Refrigerate at least 12 hours before using them. They will hold their flavor and consistency 10 days two weeks.
