I guess we all are in this together. The past week the news outlets have been teaming with articles on food safety.The irradation, of Lettuce and Spinach. Why do we have to irradate anything if we grow it using all of the safe measures available? The HR 875, a new Bill going before Congress that mandates notification on where our food comes from. Without going into what I read into some of this, I can only say, I prefer to have control over what I put into my mouth and the mouths of my children. Even the First Lady decided to plant a backyard garden, what does that tell you? By staying informed, ultimately our health and well being will benefit. There are so many reasons to grow your own and to Buy Local, Buy Fresh. Having this bounty of great food at our doorstep is a very satsifying feeling. Come on over to the farm and let us show you why growing your own food and or choosing our fresh pesticide free food is easy, inexpensive and in the long run taking back what may be taken from you.

Jam PRESERVING STRAWBERRIES
The best jam you will ever eat is one that you made yourself! The berries are at thier best and ready for the picking. I know I enjoy the satisfaction of using all of the fresh ingredients at my disposal and making some GOOD tasting jams, jellies, salsa, whatever. It really doesn't take that much time, and with the economy the way it is, maybe it's better to stay at home Saturday morning and can, rather than spending money on all of those gotta have it sales! (I hope your better half didn't just read that!)
I do have some canning goods at the farm and I will be ordering more from the Ball Corporation. Check out thier website for some great recipes.

ROSIE'S BOK CHOY SALAD
 
INGREDIENTS (
Nutrition)
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/2 cup white sugar
  • 1 tablespoon soy sauce
  • 1/4 cup margarine
  • 1/4 cup blanched slivered almonds
  • 1/4 cup sesame seeds
  • 2 (3 ounce) packages ramen noodle pasta, crushed
  • 1 medium head bok choy
  • 3 green onions

DIRECTIONS

  1. In a small bowl, whisk together the vinegar, oil, sugar and soy sauce. Set aside.
  2. Melt the margarine over medium heat in a small skillet. Crush the ramen noodles while still in their packaging, and add to the margarine along with the almonds and sesame seeds. Saute until everything is golden brown. Remove from heat and drain on a paper towel.
  3. Chop the bok choy and green onions and add to a large bowl. Just before serving, sprinkle with the noodle mixture and dressing, and toss to coat.
