Greetings! So, you have your Hydroponic Growing System or you are thinking of buying one, now what? You have decided your family is going to eat healthy. The kids are going to learn all about food, how it is grown, how some foods we eat are safer and more nutritious than others. I could go on and on. This is a great experience for all of us. Today's economy may turn out to be a positive thing. Maybe we will start to look at how we can survive without the big guys (if you know what I mean). Victory Gardens may have been a thing of the past, but, guess what, it is not a bad idea. THE GOOD GUYS
Look around the farm next time you visit. We have been using Ladybugs for controlling the aphids, whiteflies and other pests harmful to the health of our plants. Don't hesitate to call us if you need to know what method of biological control you need if your plants begin to show signs of harmful organisms. GREEN THUMB GARDEN If you are not sure where to start, let us suggest the Green Thumb Garden. This is a great starter kit that is easily made to accommodate many more growing spaces and can be converted into an automatic garden very inexpensively. The kit contains the 4 pots and the large ground pot on the bottom. This totals approximately 30-40 growing spaces. All of the growing medium you will need and all of the nutrients to grow large healthy plants. The steel rods for support and all of the PVC for arranging the pots is also included. The best thing that is included is our expertise and knowledge. Just add love and sunshine and you will be feeding your family freshly grown, pesticide free, veggies in no time flat. HERBS
So many people come to the farm and pass on a great opportunity to buy the fresh herbs. We have several growing all over the farm. If you want to really give your family a pleasant and fresh tasting dinner, don't forget the herbs! In the picture to the right is Dill and on the bottom right of this picture is Oregano. Don't forget, you can grow them yourself!
Dill is mainly used in pickling, where most of the plant is used. "Dill Pickles" have become a North American classic and in Europe Sauerkraut and dill vinegar have been popular for centuries. It is especially popular in Russia and Scandinavia, where it is used in courts-bouillon and sauces for fish, pickled salmon, casseroles and soups. It is also used on cakes and breads, particularly in rye breads, the way caraway is used. Dill should be used sparingly as the flavor grows. Its flavor works well in sour cream and yogurt sauces. The chopped fresh leaves are frequently used with trout and salmon, shrimp, deviled eggs, green beans, cauliflower, beets, soups, cottage and cream cheese. Dill will be the "Herb of the Year 2010" according to the International Herb Association.

Oregano seems like a straightforward enough herb. Anyone who has tasted a tomato-sauce-topped pizza can recall its flavor, which is hearty and assertive with a peppery bite and a zing

Today is the official day of spring as I prepare this weeks recipes
ARUGULA FRITTATA
1 egg plus 1 egg white
1 cup arugula
1 tsp. black pepper
� cup farmer's cheese or grated cheese of choice
1 tomato, sliced
Preheat oven to 350 degrees. Pour about � inch of water into a small saucepan and bring to a simmer over medium-high heat. Fit a steamer basket in saucepan. Place the arugula in the steamer basket, cover and steam until the arugula is wilted, about 1-2 minutes. In a medium bowl, whisk together the egg and pepper. Stir in the arugula. Pour the mixture into a 6-inch nonstick skillet. Top with cheese. Bake at 350 degrees for 12-15 minutes or until set. Slide the frittata onto a plate with a rubber spatula and top with slices of fresh tomato.
STRAWBERRY COBBLER
1 quart fresh strawberries
� lb. butter
1 cup milk
1 cup flour
1 � tsp. baking powder
� tsp. salt
1 cup sugar
� tsp. ground cinnamon
Whipped cream (optional)
Preheat oven to 400 degrees. Hull the strawberries. Melt butter in an 8x12 inch baking dish in preheated oven about 4 minutes. Remove dish from oven. Add milk, flour, baking powder, salt, sugar and cinnamon to the baking dish and stir until just mixed. Arrange strawberries, tips pointed up, on top of the batter. Bake cobbler in oven until golden brown, about 25 minutes. Serve warm or room temperature. Makes 4 servings.
STRAWBERRY MIXED GREEN SALAD
2 Tbsp. sesame seeds
1 � cups of fresh greens
Dressing:
1/3 cup vegetable oil
1/3 cup red wine vinegar
1 Tbsp. sugar
2 tsp. minced green onion
� tsp. paprika
� tsp. Worcestershire sauce
2 Cups fresh strawberries, hulled and halved
In a small skillet over medium heat, stir sesame seeds until golden; set aside. Wash greens thoroughly; dry in salad spinner or on paper towels, wrap and chill. Blend dressing together. In a large bowl, mix together greens, strawberries, dressing and sesame seeds.
PORK-STUFFED COLLARD GREENS
1 large bunch of collard greens
1 pound ground pork
2 tsp. salt
2 tsp. ground cumin
2 tsp. red chili flakes
2 tsp. onion powder
1 tsp. garlic powder
1 tsp. fresh or dried Mexican oregano
� tsp. ground nutmeg
1 � cups chicken stock
8x8 inch baking dish
Preheat oven to 400 degrees. Bring a large pot of salted water to a boil, add collard greens and cook for 3-4 minutes until greens are soft and pliable. Drain and set aside. In a large bowl, mix together pork, salt, cumin, chili flakes, onion powder, garlic powder, oregano and nutmeg in a bowl. Divide into 4 sections to form oblong patties. Wrap each patty in 4 collard leaves. Place patties seam side down in the baking dish and enough stock to reach � of the way up the stuffed greens. Cover with heavy-duty aluminum foil and bake until pork is cooked through, about 35 minutes.
